Just a few short years ago, it would have seemed madness to take a photo of the food you\u2019re about to eat and post it on social media. Today, however, it\u2019s almost normal to upload and share a picture of the great steak you\u2019re eating in a local pub, or a fancy afternoon tea you\u2019re enjoying with friends.<\/strong><\/p>\n\n\n\n

The way people now talk about food highlights the growing\nimportance consumers are placing on the food they eat, as well as their\nwillingness to embrace technology in everyday life \u2014 and it\u2019s something the\nsupply chain should not ignore.<\/p>\n\n\n\n

Supply chain knowledge<\/h2>\n\n\n\n

Consumers care about where their food is from and\nincreasingly about traceability. With consumers so willing to turn to their\nphones, it\u2019s not too big a step to think that in the not so distant future,\nshoppers could be using apps on their phones whilst they shop to find out more\nabout the food they\u2019re buying.<\/p>\n\n\n\n

Simply scanning an item on a shelf with an app could bring up\ninformation on where each ingredient was produced, nutrient content and other\nfactors.<\/p>\n\n\n\n

This would inevitably lead to increased pressure on food\ncompanies to have better knowledge and understanding of their supply chains so\nthey can provide relevant and comparable information.<\/p>\n\n\n\n

At this year\u2019s City Food Lecture<\/a> (26\nFebruary), Dominic Blakemore, chief executive of contract catering giant Compass Group<\/a>, said the\nfirm had already seen increasing demand from customers to demonstrate the setup\nof \u2018local\u2019 supply chains.<\/p>\n\n\n\n

To address their demands, Compass has developed \u2018mini supply\nchains\u2019 to provide food from within a very close radius of the customer, he\nsaid.<\/p>\n\n\n\n

Is local really better?<\/h2>\n\n\n\n

This approach to \u2018local food\u2019, however, brings up numerous\nquestions which need to be addressed if the supply chain is going to fulfil\nconsumer expectations.<\/p>\n\n\n\n

Firstly, how do you define local? Go back just two years, and\nlocal meant produced in the UK. Today, it could mean just a few miles away from\npoint of sale.<\/p>\n\n\n\n

Another important element, is whether local food really is\nbetter, and whether consumers actually need to be told that sometimes it might\nnot be the case.<\/p>\n\n\n\n

Some ingredients can\u2019t be sourced from nearby, and those that\nare may not be better from a cost perspective or an environmental impact point\nof view.<\/p>\n\n\n\n

The impact of food should consider land management practices\nand impact on biodiversity, land use, water and air quality.<\/p>\n\n\n\n

These issues are regionally variable, and poor practices or\nsensitive environments could mean that the cost of transport is outweighed by\nprotection of the local environment.<\/p>\n\n\n\n

The danger is that the consumer could be bombarded with too\nmany messages, whilst more labels and terms could add to existing confusions.<\/p>\n\n\n\n

What\u2019s clear is that companies throughout the supply chain\nneed to listen to consumer trends and carefully understand where they are\nsourcing products from. Ultimately the consumer of tomorrow will expect it.<\/p>\n","protected":false},"excerpt":{"rendered":"
